Mexican Bean Wraps

Mexican Bean Wraps
Serves: 2
Prep time; 20 minutes
Cooking time: 5 minutes

Ingredients:

  • 2 spring onions
  • 4 large tomatoes, chopped
  • 1 green pepper, diced
  • 1 x can kidney beans, drained
  • 1 x small can sweetcorn, drained
  • 1 red chilli, diced
  • 2 tablespoons tomato puree
  • 1 teaspoon smoked paprika
  • 1 teaspoon mixed herbs
  • Pinch of black pepper 
Serve with:
  • Wraps
  • Loving Foods Organic Fermented Spicy Cortido
Get making!
  1. Mix together all of the ingredients for the bean filling in a bowl and leave in the fridge for 30 minutes to allow the flavours to absorb and merge together.
  2. When ready to serve, heat up the wraps according to instructions then spoon some of the bean filling into each, with a generous serving of Spicy Cordito. Enjoy!
